Tender beef short ribs slow-cooked in apple cider for a rich, flavorful dish.

- 4 lbs beef short ribs
- 2 cups apple cider
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 sprigs fresh thyme
- 1 bay leaf
Instructions
- Season short ribs with salt and pepper.
- Heat olive oil in a large pot and brown ribs on all sides.
- Remove ribs and sauté onion and garlic until soft.
- Add apple cider, thyme, and bay leaf.
- Return ribs to pot, cover, and simmer for 3 hours.
- Remove ribs and reduce sauce until thickened.
- Serve ribs with sauce.
Notes
- Use a heavy pot for even cooking.
- Check ribs for tenderness after 2.5 hours.
- Skim excess fat from sauce before reducing.
