Tender beef short ribs slow-cooked in apple cider for a rich, flavorful dish.


Ingredients

  • 4 lbs beef short ribs
  • 2 cups apple cider
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 sprigs fresh thyme
  • 1 bay leaf

Instructions

  1. Season short ribs with salt and pepper.
  2. Heat olive oil in a large pot and brown ribs on all sides.
  3. Remove ribs and sauté onion and garlic until soft.
  4. Add apple cider, thyme, and bay leaf.
  5. Return ribs to pot, cover, and simmer for 3 hours.
  6. Remove ribs and reduce sauce until thickened.
  7. Serve ribs with sauce.

Notes

  • Use a heavy pot for even cooking.
  • Check ribs for tenderness after 2.5 hours.
  • Skim excess fat from sauce before reducing.
