Ingredients

  • 1 cup granulated sugar
  • 1 cup cake flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat egg whites and cream of tartar until soft peaks form.
  3. Gradually add sugar, continuing to beat until stiff peaks form.
  4. Sift cake flour and salt together, then gently fold into the egg mixture.
  5. Add vanilla extract and fold until just combined.
  6. Pour batter into an ungreased angel food cake pan.
  7. Bake for 35-40 minutes or until the cake is golden and springs back when touched.
  8. Invert the pan and let the cake cool completely before removing.

Notes

  • Use room temperature egg whites for better volume.
  • Do not grease the pan to allow the cake to cling and rise properly.
  • Store in an airtight container for up to 3 days.
