Description
A light and fluffy cake made primarily from egg whites and sugar.
Ingredients

- 1 cup egg whites (about 10 large eggs)
- 1 cup granulated sugar
- 1 cup cake flour
- 1 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, beat egg whites and cream of tartar until soft peaks form.
- Gradually add sugar, continuing to beat until stiff peaks form.
- Sift cake flour and salt together, then gently fold into the egg mixture.
- Add vanilla extract and fold until just combined.
- Pour batter into an ungreased angel food cake pan.
- Bake for 35-40 minutes or until the cake is golden and springs back when touched.
- Invert the pan and let the cake cool completely before removing.
Notes
- Use room temperature egg whites for better volume.
- Do not grease the pan to allow the cake to cling and rise properly.
- Store in an airtight container for up to 3 days.
