This air fryer zucchini and squash recipe is a quick and healthy side dish that’s full of flavor. Perfectly tender and slightly crispy, these vegetables are a great addition to any meal.

- 2 medium zucchinis, sliced into half-moons
- 2 medium yellow squashes, sliced into half-moons
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for garnish (optional)
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine the sliced zucchini and squash.
- Drizzle with olive oil and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss until the vegetables are evenly coated.
- Place the zucchini and squash in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
- Air fry for 10-12 minutes, shaking the basket halfway through the cooking time, until the vegetables are tender and slightly crispy.
- Remove from the air fryer and serve immediately, garnished with Parmesan cheese if desired.
Notes
- For extra crispiness, you can spray a little cooking spray on the vegetables before air frying.
- Feel free to add other seasonings or herbs according to your preference.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
