Ingredients

  • 2 medium zucchinis, sliced into half-moons
  • 2 medium yellow squashes, sliced into half-moons
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchini and squash.
  3. Drizzle with olive oil and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss until the vegetables are evenly coated.
  4. Place the zucchini and squash in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
  5. Air fry for 10-12 minutes, shaking the basket halfway through the cooking time, until the vegetables are tender and slightly crispy.
  6. Remove from the air fryer and serve immediately, garnished with Parmesan cheese if desired.

Notes

  • For extra crispiness, you can spray a little cooking spray on the vegetables before air frying.
  • Feel free to add other seasonings or herbs according to your preference.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
