A quick and easy recipe for perfectly crispy and tender zucchini and squash cooked in the air fryer.
Ingredients

- 2 medium zucchini, sliced into rounds
- 2 medium yellow squash, sliced into rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for garnish (optional)
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a large bowl, combine the sliced zucchini and squash.
- Drizzle with olive oil and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss to coat evenly.
- Place the seasoned zucchini and squash in the air fryer basket in a single layer. You may need to do this in batches to avoid overcrowding.
- Air fry for 12-15 minutes, shaking the basket halfway through, until the vegetables are tender and slightly crispy.
- Remove from the air fryer and garnish with Parmesan cheese if desired. Serve immediately.
Notes
- Feel free to customize the seasonings based on your preference.
- If you like your vegetables extra crispy, you can increase the cooking time by a couple of minutes.
