A quick and easy recipe for perfectly crispy and tender zucchini and squash cooked in the air fryer.


Ingredients

  • 2 medium zucchini, sliced into rounds
  • 2 medium yellow squash, sliced into rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchini and squash.
  3. Drizzle with olive oil and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss to coat evenly.
  4. Place the seasoned zucchini and squash in the air fryer basket in a single layer. You may need to do this in batches to avoid overcrowding.
  5. Air fry for 12-15 minutes, shaking the basket halfway through, until the vegetables are tender and slightly crispy.
  6. Remove from the air fryer and garnish with Parmesan cheese if desired. Serve immediately.
