These air fryer meal prep bowls are perfect for a healthy and easy week of meals. Customize with your favorite proteins and veggies!
Ingredients

- 2 large Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 4 cups Mixed Vegetables (broccoli, bell peppers, carrots)
- 2 cups Cooked Quinoa or Brown Rice
- 2 tablespoons Soy Sauce
- 1 tablespoon Sesame Seeds
Instructions
- Preheat the air fryer to 380°F (190°C).
- In a bowl, mix olive oil, garlic powder, salt, and black pepper. Add chicken breasts and coat well.
- Place the chicken in the air fryer basket and cook for 12-15 minutes, flipping halfway through, until fully cooked.
- In the meantime, toss mixed vegetables in a bit of olive oil and season with salt and pepper.
- Once the chicken is done, remove it and add the vegetables to the air fryer. Cook for 8-10 minutes until tender.
- While the chicken and veggies are cooking, prepare your quinoa or brown rice.
- Once everything is cooked, slice the chicken and assemble your meal prep bowls by adding quinoa/rice, chicken, and vegetables.
- Drizzle with soy sauce and sprinkle sesame seeds on top before sealing the bowls.
Notes
- You can substitute chicken with tofu for a vegetarian option.
- Feel free to use any vegetables you have on hand.
- These meal prep bowls can be stored in the fridge for up to 4 days.
