- 1 pound large shrimp, peeled and deveined
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a shallow dish, combine flour, garlic powder, paprika, salt, and pepper.
- In another shallow dish, place the beaten eggs.
- In a third shallow dish, combine shredded coconut and panko breadcrumbs.
- Dredge each shrimp first in the flour mixture, shaking off the excess.
- Dip the shrimp into the beaten eggs, allowing excess to drip off.
- Lastly, coat the shrimp in the coconut and panko mixture, pressing gently to adhere.
- Arrange shrimp in a single layer in the air fryer basket. Spray lightly with cooking spray.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Serve with sweet chili sauce for dipping.
