  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup shredded coconut
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a shallow dish, combine flour, garlic powder, paprika, salt, and pepper.
  3. In another shallow dish, place the beaten eggs.
  4. In a third shallow dish, combine shredded coconut and panko breadcrumbs.
  5. Dredge each shrimp first in the flour mixture, shaking off the excess.
  6. Dip the shrimp into the beaten eggs, allowing excess to drip off.
  7. Lastly, coat the shrimp in the coconut and panko mixture, pressing gently to adhere.
  8. Arrange shrimp in a single layer in the air fryer basket. Spray lightly with cooking spray.
  9. Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  10. Serve with sweet chili sauce for dipping.
