Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a bowl, mix cherry tomatoes, cucumber, avocado, and parsley.
  6. Add cooled quinoa to the vegetable mix.
  7. Drizzle olive oil and lemon juice over the mixture.
  8. Season with salt and pepper.
  9. Toss gently to combine.
  10. Serve chilled or at room temperature.
