- 2 boneless chicken breasts (200g each)
- 4 large tortillas
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1/4 cup butter
- 2 tbsp flour
- 1 cup milk
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups frozen fries
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cook chicken breasts in a pan until fully done, then shred.
- Mix shredded chicken with 1/2 cup cheese and roll into tortillas.
- Place rolled tortillas in a baking dish.
- Melt butter in a saucepan, add flour, and stir to make a roux.
- Slowly whisk in milk, then add sour cream, garlic powder, salt, and pepper.
- Pour white sauce over enchiladas and top with remaining cheese.
- Bake for 20 minutes.
- Toss fries with olive oil and bake separately for 15 minutes.
- Serve enchiladas with crispy fries.
Notes
- Use rotisserie chicken for quicker prep.
- Adjust spice levels to taste.
