- 1 cup quinoa, rinsed
- 2 cups water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, fresh or frozen
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
- Fluff the cooked quinoa with a fork and let it cool for a few minutes.
- In a large bowl, combine black beans, corn, bell pepper, red onion, and cilantro.
- Add the cooled quinoa to the bowl.
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Taste and adjust seasoning if necessary.
- Serve immediately or refrigerate for 30 minutes for the flavors to meld.
